Every summer we cook paellas for town festivals, festival committees, associations and town councils. This is what organisers always ask us before booking, explained plainly.

How many servings you need

The starting figure is the number of people who will pay or collect a ticket. We cook from 30 billable servings, but the price per person starts to make sense from 80 upwards, and it goes down as the number of guests rises. From 160 guests it levels off, and for events of more than 400 it drops further.

The space we need

For a service of up to 50 people we need a working area of about 3x3 metres, flat, safe and accessible. For large events, the space is agreed in advance according to the number of pans. We need to reach it by vehicle to load and unload, and to know whether a municipal permit is needed to park.

Timing

We need at least two and a half hours before serving time to install, set up and prepare. For large events that time is longer: either we set up the day before, or we arrive at first light. If access to the site is not guaranteed at the agreed time, the service starts late.

Gas, water and power

We work with our own gas bottles and self-contained equipment, and we do not need an electrical connection. We do not cook over firewood: gas is safer and easier to control in a public space. If there is a water point on site we use it occasionally, and if there is none, we bring the water ourselves.

Who serves and who charges

Tickets and access control are always handled by the organising body. We cook and we serve. At big festivals it helps a lot to have two or three volunteers keeping the queue in order: the rice is ready on time, and what slows things down is people looking for where to stand.

Allergies and intolerances

We need to know beforehand, not on the day. We have a vegetable paella suitable for vegetarians and coeliacs, and the allergen list for every rice on the paella page. If there are specific intolerances, we adapt.

What it costs

The price is per person, VAT included, and covers the live cooking, the setup, the service and the tableware. Travel is calculated according to the distance from our base in Campdevànol. We always work with a fixed quote: ask for yours with the date, the place and the number of guests.
